Store-bought protein bars are expensive and often full of sugar alcohols. These homemade protein bars take 15 minutes, use six ingredients, and have 12 grams of protein each with a crisp dark chocolate top.

Pack them tight

The difference between bars and crumbs is pressure. Press the mixture firmly into the pan with the bottom of a measuring cup, especially at the edges.

Variations

  • Almond joy: almond butter, 2 tbsp shredded coconut and dark chocolate on top.
  • Birthday cake: vanilla protein, a splash of almond extract and sprinkles.
  • Oatmeal raisin: cinnamon and 1/4 cup raisins, no chocolate.

Servings

Ingredients

Instructions

  1. Line an 8x8-inch pan (or a 9x5 loaf pan for thicker bars) with parchment, leaving an overhang.
  2. Warm the peanut butter and honey for 20 seconds and stir until smooth.
  3. Stir in the oats, protein powder and salt. Add milk 1 tablespoon at a time until the mixture holds together like stiff cookie dough.
  4. Press firmly and evenly into the pan. Use the bottom of a measuring cup to pack it down.
  5. Spread the melted chocolate over the top. Refrigerate for 1 hour, then lift out and cut into 8 bars.

Notes

  • Pressing the mixture hard is what keeps the bars from crumbling.
  • Keep in the fridge for 1 week or freeze up to 3 months. Wrap individually for grab-and-go.
