A Mediterranean quinoa salad with chickpeas, edamame, cucumber, tomatoes and feta in a lemon-oregano dressing. 19g protein, 10g fiber, meal-prep friendly.
Most quinoa salad recipes are a side dish. This quinoa salad is a full lunch: chickpeas and edamame join the quinoa to bring each bowl to 19 grams of protein and 10 grams of fiber, all tossed in a bright lemon-oregano dressing with feta.
Quinoa is a complete protein, chickpeas add protein and fiber, and edamame is one of the most protein-dense vegetables you can buy. Feta adds a little more and a lot of flavor.
Dress the whole salad on Sunday. Unlike leafy salads, it gets better as the quinoa soaks up the dressing. Pack it with a lemon wedge to brighten it before eating.
Top with grilled chicken, Greek yogurt marinated chicken or a piece of salmon for 40 grams of protein or more.
Fluffy, separate grains are the foundation of a good quinoa salad:
Cucumber, cherry tomatoes, red onion, parsley, feta and a lemon-oregano olive oil dressing. Kalamata olives, roasted red peppers or artichoke hearts are classic additions if you want to go further.
Divide into 4 containers with a lemon wedge each. It keeps 4 days and travels well without a cooler for a few hours.
