Most store-bought granola has 3 to 5 grams of protein per serving and a lot of sugar. This high protein granola has 13 grams per half cup, from vanilla protein, pumpkin seeds and almonds, and bakes into big crunchy clusters.

The cluster trick

A whipped egg white binds the oats into chunks as it bakes. Press the granola flat on the pan, don’t stir it, and let it cool completely before breaking it up.

Why bake it low

Protein powder browns and turns bitter quickly. 300°F for about 30 minutes gives you golden, toasty granola without scorching.

How to use it

  • On a protein yogurt bowl with berries.
  • With cold milk as cereal (adds 8 grams of protein per cup of milk).
  • By the handful as a snack.

Ingredients

Instructions

  1. Heat the oven to 300°F (150°C) and line a large sheet pan with parchment.
  2. Mix the oats, protein powder, pumpkin seeds, almonds, cinnamon and salt in a large bowl.
  3. Warm the honey and coconut oil together for 20 seconds, stir in the vanilla, and pour over the dry ingredients. Stir until everything is evenly coated.
  4. Whisk the egg white until frothy and fold it in. This is what creates big clusters.
  5. Press the mixture into a flat, even layer on the pan. Bake for 30 to 35 minutes, rotating the pan once, until golden. Do not stir.
  6. Cool completely on the pan, at least 30 minutes, then break into clusters.

Notes

  • Baking low at 300°F keeps the protein powder from scorching and turning bitter.
  • Store in an airtight jar for up to 2 weeks.

    Questions people ask

Why is my protein granola not crunchy?

It needs to cool completely on the pan. Granola crisps as it cools. If it is still soft after cooling, return it to the oven for 5 to 10 minutes.

Can I use plant protein powder?

Yes. Plant proteins absorb more liquid, so add 1 extra tablespoon of honey or water if the mix looks dry.
