French toast is already half egg, so it does not take much to make it a real protein breakfast. This protein French toast adds egg whites and half a scoop of vanilla protein to the custard and lands at 28 grams of protein for two slices, with the same cinnamon flavor you grew up with.

Getting the custard right

Whisk the protein powder into the milk first until smooth, then add the eggs. Protein powder dropped straight into eggs forms lumps that stick to the bread.

Don’t over-soak

Ten seconds per side is enough for sandwich bread. Longer and the center stays wet while the outside burns.

Toppings

  • Greek yogurt and berries (adds protein and freshness).
  • A light drizzle of maple syrup.
  • Sliced strawberries and a sprinkle of high-protein granola for crunch.

Ingredients

Instructions

  1. Whisk the milk and protein powder until smooth, then whisk in the eggs, egg whites, vanilla and cinnamon in a shallow dish.
  2. Heat a large nonstick skillet over medium heat and spray it.
  3. Dip each slice of bread in the custard for about 10 seconds per side, letting the excess drip off.
  4. Cook for 2 to 3 minutes per side, until golden and set in the middle.
  5. Serve warm with your favorite toppings.

Notes

  • Slightly stale bread soaks up custard without falling apart.
  • Mix the protein powder into the milk first. Added straight to eggs, it clumps.
  • Toppings are not included in the nutrition.
