These protein crepes are thin, flexible and easy to fold, and two of them have 23 grams of protein before any filling. The batter is mostly eggs and egg whites with just enough flour to keep them tender, so they behave like real French crepes.

Swirl fast

Pour the batter and immediately tilt the pan in a circle. Crepe batter sets in seconds, so the faster you swirl, the thinner the crepe.

Fill them

  • Sweet: Greek yogurt sweetened with honey, plus strawberries.
  • Breakfast: cottage cheese scrambled eggs and chives.
  • Lunch: sliced turkey, spinach and Swiss cheese, warmed in the pan.

Ingredients

Instructions

  1. Blend all the ingredients for 20 seconds, until completely smooth. Rest the batter for 5 minutes.
  2. Heat an 8- or 10-inch nonstick skillet over medium heat and spray it lightly.
  3. Pour in about 1/3 cup batter and immediately tilt and swirl the pan to coat the bottom in a thin layer.
  4. Cook until the edges lift and the top looks dry, about 1 minute. Flip and cook 20 to 30 seconds more.
  5. Stack on a plate and repeat with the remaining batter.

Notes

  • The first crepe is often a test. Adjust the heat if it browns too fast or sticks.
  • For savory crepes, skip the vanilla protein and use unflavored protein or none at all.
  • Fillings are not included in the nutrition.
