This Greek yogurt chocolate mousse is the dessert we make when we want chocolate and still need to hit a protein number. It takes five minutes, one bowl and a whisk, and each serving has more protein than a chicken breast half.

Why Greek yogurt makes good mousse

Strained Greek yogurt is thick enough to hold its shape on a spoon and carries about 10 grams of protein per 100 grams. Cocoa powder adds deep chocolate flavor with almost no fat, and chocolate protein powder thickens the mix further while adding another 24 grams of protein. Whisking hard for a minute gives it that glossy, airy mousse look.

Tips

  • Use nonfat or 2% plain Greek yogurt. Flavored yogurts add sugar and make the mousse too sweet.
  • Sift the cocoa if it has clumps. Small dry pockets of cocoa are the most common problem.
  • For a richer bowl, top with a spoon of peanut butter (adds about 95 calories and 4 grams of protein).

Variations

  • Mocha: dissolve 1 tsp instant espresso in the vanilla before mixing.
  • Peanut butter cup: swirl in 1 tbsp powdered peanut butter.
  • Mint chocolate: replace the vanilla with 1/4 tsp peppermint extract.

Ingredients

Instructions

  1. Add the Greek yogurt, protein powder, cocoa powder, maple syrup, vanilla and salt to a bowl.
  2. Whisk for about 1 minute, until completely smooth and glossy with no streaks of cocoa. Sift the cocoa first if it is lumpy.
  3. Divide between 2 bowls and top with the shaved dark chocolate. Eat right away, or chill for 30 minutes for a firmer, more mousse-like set.

Notes

  • Greek yogurt brands vary a lot in thickness. If the mixture is stiff, loosen with 1 to 2 tbsp milk.
  • Keeps covered in the fridge for 2 days.
