These turkey stuffed peppers are a full dinner in a pepper: lean ground turkey, black beans and brown rice in a smoky taco sauce, topped with melted cheese. Two halves give you 35 grams of protein and 10 grams of fiber.

Halve them lengthwise

Halved peppers cook faster than whole upright ones, sit flat in the dish and are easier to eat. Pre-bake them for 10 minutes while you make the filling.

Swaps

  • Use ground chicken or 93% lean beef.
  • Swap the rice for quinoa.
  • Make them Italian: marinara, mozzarella and basil instead of taco spices.

Ingredients

Instructions

  1. Heat the oven to 400°F (200°C). Place the pepper halves cut side up in a baking dish and bake 10 minutes to soften.
  2. Meanwhile, brown the turkey in a skillet over medium-high heat, about 6 minutes. Stir in the chili powder, cumin and salt.
  3. Add the tomatoes, black beans and rice. Simmer 5 minutes, until most of the liquid is absorbed.
  4. Fill the pepper halves with the turkey mixture, pressing lightly. Top with cheese.
  5. Bake 20 to 25 minutes, until the peppers are tender and the cheese is bubbling. Top with cilantro and a spoon of Greek yogurt.

Notes

  • Pre-baking the peppers means they finish tender at the same time as the filling.
  • Keeps 4 days in the fridge and reheats well in the microwave.

    Questions people ask

Do you have to precook the peppers for stuffed peppers?

It helps. Ten minutes in the oven softens them so they are tender, not crunchy, when the filling is hot.

Can I make turkey stuffed peppers without rice?

Yes. Replace the rice with cauliflower rice or an extra half can of beans.
