Cottage cheese ice cream went viral because it really works: blend cottage cheese with a little maple syrup and vanilla, freeze it, and you get something close to cheesecake frozen yogurt. This strawberry version has 13 grams of protein per scoop and needs no ice cream machine.

Blend longer than you think

Any curd left in the base turns into an icy bit when frozen. Blend for a full minute or two, until it looks like thick cream.

Stir while it freezes

Stirring every 45 minutes breaks up ice crystals. Skip it and you’ll get a firmer, more icy block that needs time to soften.

More flavors

  • Chocolate: 2 tbsp cocoa and an extra tablespoon of maple.
  • Peanut butter cup: 2 tbsp peanut butter blended in, chopped dark chocolate stirred in.
  • Cookie dough: fold in small spoonfuls of cottage cheese cookie dough.

Ingredients

Instructions

  1. Blend the cottage cheese, maple syrup and vanilla until completely smooth, 1 to 2 minutes.
  2. Stir in the chopped strawberries.
  3. Spread in a small loaf pan or freezer container and freeze for 2 to 3 hours, stirring every 45 minutes for a smoother texture.
  4. If it freezes solid, let it sit at room temperature for 10 to 15 minutes before scooping.

Notes

  • Full-fat (4%) cottage cheese gives a creamier, less icy result.
  • Best within 2 days. After that it freezes very hard.
